You should not have needed to load any schemas. The 'email-xml.xsd' is already in the MarkLogic install Config directory, so it is accessible to the server.
From the error message, it looks like a hostname lookup failure. Maybe the smtp relay hostname you entered does not resolve? Look for typos: for example, 'local host' will not resolve. As a troubleshooting step, you might try '127.0.0.1'.
Also it looks like you copied and pasted the example from http://docs.marklogic.com/5.0doc/docapp.xqy#display.xqy?fname=http://pubs/5.0doc/apidoc/ExsltBuiltins.xml&category=Extension&function=xdmp:email - but you did remember to change both 'em:adrs' elements to working email addresses?
